Since the ground pins of ICs are internally short. So, what would be prefer in hardware design for providing ground to IC. i.e. provide ground to all the gnd pins or only 1 pin. ( keeping in view that ic has a lot of ground pins).

It's better to connect all the GND pins.

All the GND pins of any chip should be always connected to ground.

But that jumbles up the routing. Altium does not make connections only to the ground plane. Rather it asks for the pin to pin connections as well. Any advice for this issue?

To do PCB layout properly, it can be sometimes very difficult.
