Auto or Interactive Route

Regarding these three project, do you use auto routing or interactive route? If interactive, how long it usually take to setup and finish such a board? let's consider OpenRex as the case?

We never use autorouter.

I have not posted OpenRex info yet, but I am sure, the link above can give you some ideas about how long it takes.

Friend of mine always use these sentence "PCB design is art"

Big and complex board design require five major steps(I guess), 1) schematic, 2)Board shape design, 3)Component placement, 4)Fan-out, and 5)Routing. Step 3, 4, and 5 sometime conflict with each other, fan-out via blocks routing, and fan-out after route make connection difficult. What do you recommend? Is that order correct?
